Your control arms are what is limiting your flex. I guess you are still using stock arms if you are running with an AEV drop bracket. The rubbers of the stock arms, although good, do not have enough give in them to allow them to twist/flex a great deal.
I've got front upper and lower Metalcloak control arms and the amount of flex I am getting with only a 2.5" lift I would have my 33's comfortably sitting in the bottom of that ditch in you second photo.
The problem I now have, because I still have stock rims, is that I have to use 4" of bump stop to try and prevent the inside of the tyre rubbing on the upper spring bucket, but it still happens and my tyres are only 255/80/17s.
Looks like I will need new rims but I will probably get rear Metalcloak control arms first.
