There is a lot of virtue in having both.
To supplement the viscous fan adding an electric one in front of the condenser to blow through towards the engine (make sure you have it flowing the right way, an easy mistake to make lol) and triggered by a thermostat that can be plumbed into the radiator hose, or even one that sits in the airflow on the radiator. Make sure you get a thermatic switch that can be set to a custom temperature and you can play with it to get the best results.
If you do that you will get an added benefit in the a/c will work better at slow speeds such as when off-roading at slow speeds because the electric fan will keep air flowing over the condenser.
