I stroked a 4.0l back in the day when the Aussie dollar was $1.10 to the US and got all the parts real cheap. Remember, higher stroking and power = less life span of engine. I’d go 4.4 to 4.6 max personally.
350hp / 260kw is a lofty aim and will require a premium cost in what you will need.

About 6 months ago a fellow advertised his XJ for sale on this site for $5,000. It had a fully imported 4.6 stroker by Golen (from memory). That would have been a great buy for you as you could have just done an engine swap with a reco job and parted out the rest of the truck. Here it is -
