Oh boy I had a similar issue years ago.
About 16-17 years ago I went fishing with some mates and some how left a packet of squid, bait packet size, about a kg I think, in the boot over a weekend after parking up.
Same as you but had no flies but the smell. It was terrible and I couldn't get it to go away. Shampooed it, scrubbed it, sprayed anything sprayable on it but came back always. Cleaned entire leather seats, car carpets, boot etc. Drove for weeks with all windows down etc.
Was a shame. Was a mint BMW too. I solved it by selling it, it was that bad.
