Been a minute but an update:
Thanks for all the input. I ended up cutting the fenders / panels with aviation snips, sanded and painted to reseal from rust. 31s are successfully on!
No rubbing at any turning angle, no rubbing over bumps. Will eventually lift it some more so theres more clearance, otherwise all good!
Also looks much better than the stock wheels ��
