Chances are they tightened up the bolts with the vehicle off the ground. Rule number 1 of suspension work is always tighten the stuff up when the vehicle is on the ground (under load).
I had the recall new rear lower control arms installed a while ago, and no noise at all.
On the road it is wise to have sway bars, you don't want death wobbles. I ran Cape York, including the OTL, with my front sway bar disconnected (I had JBA disconnects then). It made a big difference in terms of the ability to flex and stay in contact with the ground. But you don't want to drive faster than maybe 60kmph disconnected, and no rapid transistions. It was more comfortable too.
