I keep a printout in the glove box just in case, but I've driven past who knows how many cops and no-one's said anything about them. I was down at the cop-shop the other day parked in their carpark and a nice officer was asking me where I got the mud and where I go bush. (Standing next to my doorless jeep.)

No problems in Vic.

I'm sure you can't do it it in Qld - where 35s aren't even road legal. We're very relaxed down south.

He should have told you that you need to have at least one side view mirror so either get relocating brackets or get a cheap motorcycle mirror that slots directly into the empty door hinge like I do. All but $15.

Not to hijack the thread, but can you take the doors off without, chipping or breaking any paint seals?

Of course you can. Just be careful when loosening the nuts on the bottom of the hinge pins. They are painted, and it can chip off if you just go at it with a shifter. If you're careful though, you can loosen them without taking the paint off them, and then the doors just lift off.
(Take the nylon strap bit off its thingy inside the door first, or you'll be stuck there with a heavy door in your hands still strapped to the car.)

It's a 30 second exercise once you've done it before.
I wind my windows right down to give me somewhere else to grip the door too.

to remove the nuts without chipping the paint.. use some cloth. and a slightly bigger socket/spanner than the actual nut size.
