Also, does the tyre mount swing away with the tailgate when opened or do you have to open them one at a time.
The AEV tyre mount ties into the tail gate and swings away with the tailgate, 1 button to open both.

Does the bar and tyre carrier rattle at all with moving parts?

I don't have one but I can answer this for you.

In short no, it doesn't rattle as the arm for the tyre carrier comes into contact with the rest (that you fit where you pull the old tyre carrier off of) just before the door closes. A bit like an over-centre latch. So when the tailgate is fully closed the tyre carrier is held there under tension. This can be adjusted via a turnbuckle to account for manufacturing tolerances, both with Jeeps and AEV.
There have been cases in the States (not enough fitted here) where the mast of the tyre carrier it not vertical as it should be because Jeep haven't made all Jeep frames the same. Hence the need for a tolerance adjustment.

The $1275 is aussie dollars. Unfortunately though this is the rear bar only and does not include the wheel carrier - thats another $985 option, for a total of $2,260
