I'm looking to also extend the awkward accelerator pedal height on my JK i like the wedge idea or the damxr method but wanted to check with others if this causes issues with the floor no longer being the pedal stop and now it's relying on the plastic pedal assembly to limit travel. Is this likely to break the assembly under full acceleration?
To answer your question though, "No."

In the years since I did this, I have never had an issue with the pedal. Then again, I'm not in the habit of stomping on it so hard that I hit the stop!

Ditto. Never had an issue with mine. In fact if you crawl under and have a look you will find even stock it does not hit the floor!

Great! Thanks for the replies. Looks like this will be the first thing I will be doing when I get a chance.

I honestly can't see why it doesn't bother more owners than it does, or why it was ever designed like that in the first place.

Just at work doing some research on which wedge to use, found one at Bunnings which is 40mm wide by 120mm long and the wedge height is 22mm (tapers off to 0mm)
Can anyone advise if this would be suitable in bringing the pedal to near the same height of the brake?

Also, how are the bolts attached to the firewall, are they studs, or bolts which come through from the other side?

Thanks for any help

Studs out from the firewall.

Those might be a little shallow at 22mm. Just measured mine at ~30mm high and this makes it almost level with the brake. Maybe 5mm lower than it?

Width is fine though, mine is about 30mm wide.

From memory the studs have a 4mm hex end on them so remove the nuts then unscrew the bottom studs using a 4mm socket. I them fitted the wedge (mine is about the same dimensions as yours but made from timber) and mount the top with existing studs and nuts but I replaced the bottom with same size bolts that I think from memory were 40mm long ( could have been 30 or 35, cant remember now)
