Ok..what makes a 4wd good/bad in the rough stuff? Differences?

Big engine, lots of tourqe, good traction control system. Clearance under the belly and diffs, traction able tyres suited to the terrain, short overhangs, wheelbase suited to the terrain, approach and departure angles. Weight is another one.

Technically these are the categories that would make one better than the other, but it is suited to terrain. For example a jimmy would be awesome on the beach but I wouldn't want to do a off camber long steep rock crawl with it, for that you would want a Long wheelbase like a patrol, defender, jk, etc.

Oh and I have been out done by a hilux with a v8 swap, 35's and portal axles, flex isn't everything this had leaf springs and made everything else out there look weak...clearance was insane and was lifting wheels left right and centre but it didn't matter.

Not exactly a supporting example for the Hilux!
I don't know what you have done to your Jeep, but look what he has had to do to out do you$$$$
...........aaaaaand it still won't be "unstoppable".
Er, sorry to bring that up again.
Incidently, I'm currently in Thailand and I notice, apart from other things, the hard core off roaders take any of these IFS vehicles and rip that sh*t out and fit solid front axles. Hiluxs, Mitsubishi, anything. They show no mercy.
