cool, nice idea, mine just bounces around between 2 and 7. Must be a wiring connection. What else would cause pressure weirdness? I have a leaky Turbo, don't know if that would cause it. I'll have a look at the wiring when I can.

Don;t think your turbo would be the cause for oil pressure jumping up and down.
To much oil escaping trough the turbo would manifest as a runaway engine and you wouldn't be able to turn engine off unless is stalled in higher gear .
There'll be always oil residue in intercooler hoses . Quite a bit off air pressure in those hoses and it will escape a little bit than in time it builds up as oil drops .

Unless you are having a cloud of white/blue smoke when you put your foot down/take off or the turbo wheel can be moved sideways, I would not bother with it.
You can purchase a new center piece for the turbo ~ the 2 fans, bearings, shaft, seal & middle bit of the body. Mudmonster did his recently. I have replaced the turbo on one of mine with a good second hand one & one day will rebuild the old one.
The bolts holding the dump pipe on are as hard to undo as the dreaded #3 manifold bolt ~ you need to undo that as well.
You would need to hate yourself to want to remove the turbo unnecessarily.

Relax...You'll definetly know when turbo packed up (the cars behind you will let you know for sure). Like Layback said it would be lots of white smoke. A drop or two on the bottom of intercooler hoses nothing unusual.
