I know they aren't officially rated but are the Uneek points strong enough for off road recovery?

It's what I have on my 2015 Laredo, have snatched a few blokes out without probs and I use rated shackles and equalising strap on the Uneek hooks.

Ditto. I had to be towed, not snatched, out of soft deep sand with a camper. 2 rated shackles and an equalizing bridle.

I just fitted a pair of the Chief Products recovery points and their sump protection plate to my 2013 Laredo. Their gear is top quality stuff and I'd have absolutely no hesitation recommending it.

Does the sump protection plate interfere with sump plug at all?

No, not on the diesel at least.
