When a diff is hot and u plunge it into cold water, the oil inside the diffs cools. and when cooled quickly it sucks in air or in your case water. the seal might have been on its way out and when you went from instant hot to cold the large amount of sucking would have been enough for the seal to let go.
This is why they say for larger crossings and mud to let it cool down a bit before entering. also stops the engine from being cooled and less risk of the t-case and f/r diffs sucking in water through the breathers
