I'd also add a set of head bolts to that kit as most are stretch bolts and will not give an accurate torque reading the second time round. New hoses aren't a bad idea either the often neglected heater hoses in particular as chances are they've never been touched and are just waiting to burst and ruin your lovely new head overhaul. How much for a water pump as if you don't know when this was last replaced it maybe worthwile also. I know the list of parts is adding up but really when working with the cooling system it pays not to cut corners and while it's all apart any parts you are not sure of the integrity of maybe best to replace. Head gaskets don't just blow something not working properly in the cooling system causes the overheat and if you miss it it won't be long before you have troubles again. It's a time consuming job and to have to do it again for the sake of a couple hundred dollars is not a very pleasant experience as i found out the hard way when we did Dads and forgot the radiator just cause we thought it looked ok.

just a thought, if you have a compression tester , while you have the plugs out do a compression test....I had similar symptoms as you did .....boiling on the highway....then not .....boiling in traffic.....then not....luckily I didn't cook my motor ...but water pump was screwed ....and sometimes would "cavitate".....reasonably cheap fix.......cheers..
