I run 5-6psi... 38.5 SX's on 16.5" rims, mechanical double beadlocks. SX's are pretty stiff, but mine are grooved, well worn in, and I have 16.5" rims.
Most rockcrawlers are running bigger rims now (17+ inches), so they don't LOOK to be aired down as much. They also run quite a bit of water in the tires.
With a big tire on a small rim you get alot of bagging, and even sidewall 'ripple'. With the same size tire on a larger rim, at the same pressure, you get much less ripple - and less bagging even - as there is less sidewall.
It's a trade off between pressures, ground clearance, steerability, stability, etc... you have to pick what works best for the weight of your rig, and the terrain, and your driving style.
