You dont need to drain all the coolant. Just disconnect the pipes& put them out of the way. There will be a little coolant come out & I guess you could catch it in a container & re-use. When was the last time you changed your coolant?
Gasket change is not that hard. Discussing what ,if anything to put on the gasket may cause 1,000 posts with personal opinions.
Most important thing is to make sure the surfaces are clean & free from oil before you put it back together.
