Ok just read through the thread.
You are best to use Novak Jeep adapters for a lot of the engine and transmission set up parts. There is also plenty of information as to engines and transmissions as well. Their website is a good place to visit for info.
A new wiring harness can be bought from painless harnesses.
I originally bought an SS wreck from Pickles for an engine but have since sold it. I sold the main parts from the wreck for more than I paid for the car so free engine.
A commodore LS1 engine will need the sump changed to a corvette sump. You will need to modify the engine harness and have the ECU program unlocked it or it wont go. You will need shorty style headers from Novak. Most transmissions will adapt to the LS1 with a kit from Novak. What box do you have now as it may not handle the power.
As for parts I buy mine from the USA all the time and it gets posted USPS. Never not had something turn up. Be careful buying in the expensive Items or to much at once.
There is a threshold of about 1000AUD or you might have to pay duties and taxes. This can hurt.

im on the north side mate around north lakes but travel isn't much of an issue. That sounds pretty good to me.
