Ethanol doesnt hurt the O2 sensors but leaded fuel, ie avgas does. Also do need to use sensor safe sealants.

I believe we are inferring Avgas here. Avgas is?/was commonly used by the amateur racers out there as it is a higher octane rated fuel than any pump gas. However Avgas contain TEL (lead) and is therefore illegal to use on the road and pretty much outside of any airport. It is also extremely hard to get ahold of these days if you do not have a pilots licence. You used to be able to drive up to the pumps and fill it up but I believe that is not the case anymore. Racers now have to buy race fuel. It might not produce carbon in it's own right but instead leaves lead deposits and given our engines are generally a bit older they are all probably burning a small degree of oil which in turn will produce carbon deposits. Running Avgas, if you can get it, will not remove the existing carbon deposits. Also as already mentioned it is not good for O2 sensors nor is it good for catalytic convertors or small children.

petrol (better known as dirty fuel) produces a hell of a lot of carbon , lead was used to reduce the explosion in the chamber and coat the exhaust valve , if you stick unleaded petrol into a old car , it will strip the old engine exhaust valve of its seat and send it upwards into the cyl head . the way to stop this was placing a special hardend seat into the exhaust seat of the head , when a plane is up thousands of feet into the air the last thing you would want is the engine fouling up carbon , this is why av fuel burns clean and produces no carbon , otherwise planes would drop out of the sky like flys being sprayed with toxin . as for strait through exhaust system is fine if you like to take off the cyl heads and get the hard exhaust seats done , unleaded fuel make them run HOT as there is NO lead in the fuel , if you want them to run hotter and redo them every 500 odd kays like a tourist racing car , that's ok too , not my money .

carbon build up slows a engine , I even hear that people (and get this one ) ULTRASOUND the engine chambers to clear out carbon, any fuel you buy at the garage is not clean , Australia would have to have the most dirty fuel in the world ( well not as bad as costa rica) but I guess they would have plenty of ethanol there , plenty of sugar cane there ..... and glue. cat converters are meant to be replaced (every two years I think cant remember) but how many cars on the road do ? not too many im sure . but anyway , I guess one can place 300ml of diesel in when a valve sticks , or replace a engine when a piston skirt breaks from over heat.
