and I have no understanding as to why anyone would convert their JK or anything else over to a spindle bearing set up such as that, complete assemblies are cheap, long lasting and easy to change out in the bush with no concern of dirt ingress if doing such a repair in remote locations.

I agree with 99% of what you say, especially the conversation part. I wouldn't even entertain the idea.
But on a personal note, and being old school, I have never had a problem with the old traditional bearing setup.
Not only have I never spent anything like $100 a hub on the "old" style, they were messy but not difficult to service.
Also, you could physically inspect the condition and act accordingly. I don't really trust something you can't see into.
I have a spare front hub assembly which I would pack if going too far into the wilderness. It's a bigger and heavier package than a couple of bearings from a bearing service to carry, although it does cover the spare front sensor issue at the same time. Pros and Cons I guess.
