Nothing is going to report EGT without a pyro probe in the exhaust. Not sure about how that engine is layed out but pre-turbo is my preferred place for the pyro, and mine is drilled and tapped into the exhaust manifold blend area just before the turbo entry. Pretty easy to do on the VM 2.8. I agree it's the most important gauge you can have in a diesel. Get a gauge that has an alarm threshold to warn you if you exceed the target. Many, and I mean many, people ruin diesels by over-fueling them constantly and building up the heat to the point where it damages the engine and sensors. Drive to the EGT gauge with a reasonable target temp and you will never have a problem with that engine. Now pre-turbo temps are usually targetted at from 1000F to 1200F, I have mine set for 1000F. If it exceeds the target back off or go to a lower gear that is more thermally efficient for the situation. Post turbo temps will be significantly lower and that is why I prefer pre-turbo so that I know exactly what is going into the turbo and not just the temp of some gases in the dump pipe after they have cooled and expanded and shed heat into the turbo.
