Do you know what offset rims you will be getting?
I run 285/75R17 KM2's, on stock 17 alloys. Prior to that I had 285/70R17 K02's. Both sets rub on the rear, inside of the tire up high against the body. Its very minor and of no concern. Fronts like to eat the sway bar when its disconnected at full lock regardless of where I tie it away, ways around this though. And not in issue with the sway bar connected.
So assuming the offset you get doesn't sit the tire in any further than the factory rims you should be fine.
As for the lift, it should have no effect on the size of tire you can fit unless it has oversize bumps, in which case you are loosing available up travel....
