Default Camping recepies.

Ok started this thread so people could share thier favorite camping meals.

Please try to keep it just to recepies.

Beef Curry

What do you need

750gm stewing beef

2 tablespoons oil

1 large onion, chopped

1-2 tablespoons curry powder

2 cloves garlic, crushed

1/2 teaspoon ground ginger

1/2 cup beef stock (made from stock cube)

1/2 cup coconut milk ("long life" carton available )

Note: lamb can be substituted.


How to do it

Remove excess fat from beef and cut into bite size pieces.

Heat oil in a heavy pan or camp oven and saute onion until soft.

Add curry powder, crushed garlic and ginger and fry gently, stirring mixture, for five minutes.

Add the beef and cook for three to four minutes, stirring well during cooking.

Add stock or water and coconut milk.

Cover pan and simmer gently (or bury camp oven in hot coals)

Stir occasionally for about one hour or liquid has thickened.

Serve with boiled rice

Lamb and Herb Dumpling Casserole

What do you need

500gm of diced lamb

3 medium parsnips chopped

3 medium carrots chopped

3 medium onions chopped

plain flour

Masterfoods Steak spice

1 Beef stock cube (OXO)

water

fresh rosemary finely chopped

2 table spoon wostechire sauce

1 good teaspoon of hot english mustard

salt & pepper to taste


Herb Dumplings


1 3/4 SR flour

50g butter

1 tsp salt

4 tablespoons of mixed dry herbs such as

thyme, rosemary, tarragon, oregano, basil, parsley

milk


How to do it

Mix the spice and salt and pepper with the flour and toss the cubed lamb into the flour.

Shake off excess and brown the meat in the oiled camp oven.

Remove the lamb with a slotted spoon and add the veges with the rosemary.

Sautee for about 2 minutes.

Toss the lamb back into the pot with any juices and add water just until the meat and veges are covered.

Add the stock cube, sauce and mustard, salt and pepper to taste.

Bring to a slow simmer – lid on.

Cook until the meat is tender, veges are well cooked and sauce is thickened.

Add the dumplings to the top of the casserole, put lid on and simmer for a further 15 mins or until the dumplings are cooked.

·Serve with steamed fresh green beans or cabbage

· Serves 4 or 2 generous servings

· Seeded mustard may be substituted for the Hot English

· Spicy fruit chutney may be substituted for the Whisteshire Sauce



Herb Dumplings

Rub the butter into the flour until it resembles a crumb.

Add your herbs and salt and mix to combine.

Make a well in the centre and add a little milk and mix until the dough comes together.

It is better to add a little milk at a time.

The dough should turn out to be a firm ball.

Take small tsp full of dough and roll into small balls.

·6 Tbsp of fresh finely chopped mixed herbs can be substituted for the dry herbs

anything cooked in a camp oven oro ver the fire, it tastes so much better

I make a chicken curry, freeze it and reheat it in the camp oven.

500 grms of chicken breast
1 red onion chopped
2 cloves of garlic chopped
1 carrot diced
1 bunch of bok choy, stems chopped and leaves sliced
3/4 potatoes quartered
3 spoons of red thai curry paste
1 can of coconut cream

Fry off chicken,onion and garlic

add curry paste and stir til it smells hot...
add water to cover and simmer.

after 20 mins add carrots, potatoes and coconut cream and turn down to low simmer. 15 mins later add stalks of bok choy. simmer again for about 30 mins.

add the capsicum and leaves from bok choy. season to taste. and simmer til it thickens.

You can make this a couple of nites before you camping and freeze it. It will thaw on your way to your destination and reheat easily.

I like to serve it with some Rotis or some fresh rolls...
