Paddys has some fairly easy stuff if you know where to look. You don't need to hit the deep stuff.
It's living up to its swamp name at the moment. We went on the bikes on Saturday, and there is plenty of water and mud around the place. But you don't need to go into the bogs and wet stuff there if you don't want. It's got a good mix and its only 30 minutes from Geelong.
I go out there a bit at the moment. Maybe come with one day. Just to look around. There are some fun whoop sections with massive whoops, they're gravel/loam based, and you would probably love that section.
In Anglesea, the Angahook area, there are some fun enough tracks like the Allardyce, Cecil, peregrine, Alcoa boundary that are still open, they are some fun to check out. They're mostly gravel, so don't need a winch etc.
You could also hit the puddles up the top in Tanners and Wiltshires, fun spots in there too. But some real deep mucky ones, so be careful in that area. Maybe stay off the Harvesters Proving ground perimeter fence track at the moment, because of the deep big mucky holes that claim many many novices out. Haha.

All the good tracks through the Otways, at the back of Wye River, Gellibrand and Barwon Downs are seasonally closed at the moment, they are the most fun.
Another real fun place to goof around at is Elaine. Behind Meridith and Elaine itself. The tracks are gravely, and there is a nice open and accessible gravel pit or two that is cool to play in. You can easily spend a few hours there exploring, and testing you and your Jeep out.
We go out to the various places a bit, if you want you can come along one day.
Hoping not to offend anyone but Brisbane Ranges? Really? You could easily do every open track in there in a commodore these days. It's all locked up mainly. We go out walking there. It's good for that, but that's it.
If you love mucking around in mud, there is always the bluestone railway quarry at Little River. That track is probably best left to slightly more experienced at the moment. It's very rough, very slippery, and questionably legal too. I wouldn't go in there without a winch and good recovery gear. I go in there a bit. It's fun to fill in few hours, but the mud surely has liquid nails mixed in with it. Stickiest clay mud ever. It's a real bastard to clean off. Watch out for the massive amounts of rock sticking out to the ground trying to rip off your crossmember under the car too. Lol.
If you live on the Bellarine Peninsula, there are a few farmers, rural type tracks behind Portarlington, and a couple of beach access tracks between Port and Drysdale that are fun novice tracks too. Go check out the beach access track at the end of Spray Farm lane. Maybe walk the access bit first to see what you think.
Another good idea is to get mine, and maybe one or two other's phone numbers...if you get stuck we'll come get thee. Haha.
