Just an extra bit of info , seems to be way worse when AC is on. When compressor cycles on it can trigger the hesitation so maybe power related issue such as dodgy relay or bad earth. It still happens when AC is off but way less frequently, it stalled twice at lights on my way to work tonight.
Its got coil over plugs, so no leads or dizzy cap.

Its not like a single cylinder is playing up but the whole lot.
What would Crank sensor or Cam sensor starting to fail do?
Although bad sensors would throw a code.
Fuel filter was changed in the last year, but the car had sat for a few years before I got it. Mind you it has driven 18mths and 30000km before this issue without problems.

Are you doing the key cycle to get the codes or using a code reader?
I have seen faulty crank sensors not throw codes, but rarely do they cause misfire usually just randomly stop with restarting usually a short time later.

Mine did exactly what you are describing on a trip back from camping. It drove me nuts, especially 250km from home. I reckon it was dodgy fuel as it started to happen after filling up and it took a few weeks to flush through and be normal again.

Another update:
Bosch platinums swapped out for NGK Iridiums,
fuel system flush run through.
throttle body and intake cleaned.
Professional scan tool used, no relevant codes.
Battery Checked and new terminals added.
Alternator checked and all OK.

Engine running very smoothly 99.9% of time
Engine still coughs occasionally especially when A/C engaged.
Going to try another TPS sensor next.

After 3 months of rarely stuttering it has finally thrown a code p0108 - MAP sensor high voltage. So have ordered an new one from rockauto hopefully it is the sensor not the wiring .
