the service manual i have recommends these in addition to what you already said:

drain and refill transfer case
replace ignition cables
replace spark plugs
lubricate steering linkage and suspension ball joints

for 5 speed transmission I would use Castrol Multitrax SAE75/90.
6 speed transmissions should only use the Mopar transmission oil

if the diffs have never been done, would do that as well.
I use Castrol synthetic diff oil SAF-XA 75W/140.

for transfer, any DEXRON III

an easy way to find out lube recommendations is to use the lube finder on oil company websites, whether shell, caltex or whatever you prefer.

I personally find that boutique oils like redline are not necessary
