The M8000 is on special at quadratec, it is a cheaper Warn but for that price is good buying. But at least 8000 is what you will want.
The 33's do fit but are better suited to an 8 inch wide rim.
Don't bother with the Jeep side steps, get proper steel rock rails.
A single optima battery might be enough to cover your needs.
The stock diff covers are shit, but you need to be getting fairly serious in some rock to knock a hole in one. ARB make heavy duty covers, some lockers like OX come with heavy covers. These lockers are cable operated and may not suit the Latte style of the JK.

i was in the same position as you 2 years ago i previously owned a grand vitara and damaged the under sill badly on some rocks after returning from my hang gliding trip at teewah beach.

i sold the grand vitara after owning it for 8 months and purchase a new jk wrangler, camper trailer, new hang glider and custom made my own roof racks to carry about 4 gliders max. My gliders weigh about 38 kilos each being that they are advanced.

The jeeps a very capable in standard form, no looking back for me so far...
