I'd be inclined to recommend getting a prefilter head for whichever you decide on rather than a ram head. I have a ram head & can say that it doesn't really do anything for power or economy, except maybe at high revs, (by providing less incoming pressure drop.) I have managed to get muddy water splashed into it and if it is dry & dusty the air filter will get clogged by dust very quickly. I had to clean mine out after 1 day trip!)

As such I have now invested in a prefilter & expect it will help in that regard. It will cause some restriction, but only over ~3000rpm or so. And that is worth it for getting cleaner air in the long run.

Can you still fold the windscreen down with the snorkel?

I dont have a snorkel as yet, but it bolts to the windscreen frame... so although you can undo the bolts for the snorkel and windscreen it would leave the snorkel unattached and with no support...

Also from memory it looks like it will allow the screen to be folded down (thats a distant memory from the AEV one I saw)... but still leaves you with no support for the snorkel.

Dont know how strong they are to support themselves under speed???
