The bar would be plenty strong enough to carry a 3rd jerry on the spare tyre? I've read that its a bad idea as it adds alot of leverage to the tyre carrier.
His rear bar is ultra strong i have had 2 full jerrys and been sitting on spare tyre with confidence BUT , definitely something worth asking victor.

Agree on cans over tank...but id also like to recommend BJW and Victor, best customer service around and im in NSW.

Thanks for all the help guys!!

I ended up ringing Victor and i ordered a rear bar with jerry can holders.

Ill post some pictures up once it arrives and i install it
