Are your diff's standard? If so, re-grearing would give you good results for towing.

How does removing the muffler increase power? I'm struggling to see the logic in this. Yes it would bring boost on faster, and sound awsome... but net power gain? How?

The 255/75/17's are roughly midway between the 285/75/16 (or 285/70/17) and the OE 245/75/17's that most JK's come with.
When I moved up from 245/75/17 to 285/70/17 I did notice a slightly difference in performance but it wasn't a huge difference.
What you're talking about is half of that, so while it will help, it's not going to make a profound difference.

I'd say the money for new tyres would be better spent on a GDE tune. That'll give a bigger performance gain and will over time pay for itself due to the economy gains you'll also get (as well as increasing engine longevity).

I'd thought about this as re-gearing the diffs will help in terms of low down performance gains. It'll certainly make it easier to pull away, but there would be other trade offs.
The auto JK's are supposed to have OD off to tow which means we're towing in 3rd gear. As it stands that means we're already pulling around 2500 revs at freeway speeds. Re-gearing will increase the revs even further which will potentially have a detrimental impact on economy at speed, not to mention increase noise levels as they're not the quietest motors when pulling higher revs.
I personally didn't think it was worth it...........though I was easily convinced as I can't afford it anyway.

You're right.......as fast as I know. When I removed the muffler the turbo seemed to spool up earlier and easier making it slightly better to drive at slow speeds as it removed some of the throttle response/turbo lag.
