7A charger will be fine. Only advantage (assuming the battery is healthy.) to charging at higher amps is that you can charge faster. But it won't need much after just sitting for a week or so.
I dunno about that alternator but 200A sounds about right.
Ps; its appropriate to call the battery "800Amp", just a bit inaccurate.
A = Amp, is a measure of current.
CCA = Cold Cranking Amps, means the max amps that a battery can deliver when "cold".
AH = Amp Hour, means the number of Amps in 1 hour, or the number of hours at 1amp.
So a 800CCA battery can deliver 800A (kinda, not in reality.) in a burst.
And if it has say 70AH capacity, it can provide 1A for 70 hours until dead-flat.
