So in short the answer is no they are not legal but many fit them anyway. Can't say I've seen any brand of tyre where a 7" rim is OK for that size.
I'm running 285/75's on 16x8" wheels with a 5x5 stud pattern, 9mm offset & 4.6" of backspacing. The tread is only just level with the edge of the guards & has clearance in all directions on full travel.
There's a few Cooper ST's and Mickey Thompson ATZ's that can be fitted to a 7" rim. I have been looking for them so I don't have to replace the factory 16's

I called a few places about the MTZ and no one seems to want to fit them on 7" Wide wheels.
