Sounds good but there will be some side forces on the HiLift. I know it's good for vertical compression and tension but what about shear and flex by load on the gantry. I'm not sure what type of material the HiLift is made of but looks brittle though.

Yep, you're right. Just done some checks.
If I wanted to make one I could utilize the jack mount, without the jack mounted, to take a weight of 250 Kg @ 1 Mtr, but it would be a cumbersome contraption, not so easy to carry or stow.
Back to the drawing board.
The system would be more suited to removing the top at home, something that I at least, don't need.
Ah well.

Here it is. Just got to find a way to get it shipped here, and it should sort out your problem:

That looks good. Have to figure out a way to mount it on the roof rack. Then you'd have to climb up to winch stuff from the ground up. Makes it rather precarious in the wet. That hydraulic jack looks kinda heavy to transport. Getting closer for sure.....

This, this is a good idea. Could even be useful for tail-mounted spares in larger or heavier sizes. I know I have to be bloody carefull to lift 33s just right else I hurt my back (shortarse).

Silly question but nevermind. People do what they want to do. You might as well ask why get a Jeep in the first place. Just drive your Hyundai Getz

Plus, I might want to do this
