That delay is a combination of the computer controlled throttle, probably the auto box working out what it's going to do and the fact that the accelerator peddle is set back (further down) from the brake so it actually takes your foot a little longer to get there in the first place. The CRD's have turbo lag to content with as well
but you'll not have to worry about that with the petrol.
I've had a CRD JK Unlimited for nearly 3 year now and love it. We go camping fairly regularly and you can get a fair bit of stuff in them but it can more like a game of 3D Tetris trying to pack them as there not as big as you think they should be. That said there's plenty of room but you do lose a bit of space due to the roll bar and the slightly narrow body.
Don't think there are any major issues with the driveline. Main things to look out for are, as pointed out below, steering components (bushes & ball joints) but they are all replaceable if needed. The 3.8 V6 is no speed machine but it's a reliable enough engine.
