From a recent post of mine..
I've got the upspec'ed 4.7 v8 available from mid 2008. Great engine lots of power and plenty of torque. I've towed a camp trailer, several boats and a jayco poptop. Whilst not as heavy as you may be going the 4.7 has done it with ease through various terrain and with bar, winch, AT, lift, snorkel, loaded roof, etc.
Fuel economy is always well under 20lt/100km (urban around 15lt) whilst towing and servicing is cheap.

I had an earlier 2002 HO 4.7 and I found up to a ton in weight didn't really add much to the fuel usage and extra weight didn't slow the car up much, but I bought a bigger van 2.3 ton and it sent the fuel up to 21 ltrs per hundred and you had to work it to keep moving on hills

I now have the 3 ltr diesel in a WK2, chalk and cheese when towing heavier and wind resistant items + better economy

So if your towing up to 2 ton you should be all good and over that and not very often also good, but if over 2 ton and often then the car will work hard
